Ingredients:
1 Pkg. of Goya Black Beans
1 box of Zatarain’s brown rice
1 can of vegetarian chili
1 can of cream of mushroom soup
1 Box of frozen corn (unthawed)
1 onion
1 orange bell pepper
1 Pkg.
of Shredded Cheddar Cheese
Sour cream (optional)
DIRECTIONS:
1)In separate pots, cook brown rice &
black beans as directed.
2)Combine vegetarian chili, unthawed corn
& cream of mushroon soup in a small pot and let cook for minutes.
3)Sautee 1 onion & 1 orange pepper in a
skillet.
4)Once all foods are cooked, use a deep
casserole dish to layer the black beans brown rice, vegetarian chili w/
corn, sauteed onion & orange bell
pepper however you’d like. Add a layer of shredded cheddar cheese to the top.
Cook for 20-25 minutes.Top off with sour cream (optional).
5) Serve Hot.
